No, Don’t Feast Your Mince Pies On These Jamie!

Last year I was sent on a little mince-pie cooking course, courtesy of Jamie Oliver. Well not Jamie himself you understand but to check out one of his Recipease establishments that claim to teach you how to do things well in the kitchen (as well as selling great looking things that I have no idea what to do with).

But suffice to say I burnt the bottom of one of their pans, got a bit squiffy on the mulled wine on offer and drank some cooking brandy by mistake.
Still (with a LOT of help from a very professional chef) I managed to turn out twelve reasonable mince pies, that actually got eaten and didn’t get thrown away. I even attempted the pastry. (OK, the chef made the pastry, I just pretended it was mine).
Not the prettiest of creations, but as I say, I was a bit squiffy…

I was sent off into the night with my pies and a new bun tray (although I’m not sure where that is now) and a big lump of my own mincemeat, made by own fair hands.

As I left I promised (in that very definite and positive drunken manner you adopt) to work on my cooking, utilise some of the many baking tips I was offered and to make something festive with my big gooey mincemeat.

I didn’t though, it stayed in the cupboard until September when I threw it away. Maybe I should have kept it and had another go this year?

    I think these mince pies look rather lovely Alice, (I would have been proud to make ones that look this good) and yes you could have kept the mince meat and just fed it with a bit more of the cooking brandy to keep it moist!

      Well I had a lot of professional help to make them look like that and they were still a bit thick and lumpy but I was very pleased with them!

      My mincemeat was going a bit white around the edges so I thought it was time to say goodbye. I’d have never managed to recreate these anyway,,,, x
